Peas:  I love fresh English peas in the pod, shelled and just barely cooked so the sweetness is still apparent and even just a bit of texture rather than pea “mush” that’s been over cooked.  If you find fresh peas at a farmer’s market or natural grocery bring some home and have the kids help you shell them.  It’s a fun family activity.  If not, the petite frozen peas work pretty well for this recipe.  Practice with our Sautéed Peas Recipe and you will be able to cook peas well.

Sautéed Peas Recipe

Serves up to 4

Ingredients

  • 6 green onions
  • 2 Tbsp olive oil
  • 1 lb fresh peas, shelled or frozen petite peas
  • 1/4 tsp salt and pepper (or to taste)
  • 2 Tbsp chopped parsley or mint or herb of your choice (optional)

Instructions

  1. Wash and chop green onions.
  2. Heat olive oil in a skillet.
  3. Sauté onions in the oil 2-3 minutes until bright green.
  4. Add peas and cook for a few minutes just until hot, stirring a few times. (5 minutes for frozen peas, 2-3 minutes for fresh)
  5. Remove from heat immediately
  6. Add salt and pepper to taste
  7. Add chopped parsley or mint to garnish (optional).
