It’s springtime and we’re ready to change up the winter dinner rotation for a few lighter, easy, quick meals. Our Chef-K team is gearing up for summer camps making easy meals a must.

We’ve all been there: It’s 5:45pm, the “what’s for dinner?” chorus has begun, and the fast food drive-thru is calling out to you. Before you dive into Door Dash or Uber eats or grab the keys and head out the door, here’s a secret: You can put a fresh, vibrant, and budget-friendly meal on the table in less time than it takes to sit in a fast-food line and for less than half of the cost of delivery services.

Making a healthy meal doesn’t require hours of meal prep or a hefty grocery bill. It’s about having high-impact ingredients on hand and a few smart shortcuts that keep the “fast” in fast food without all the questionable ingredients.

The Three-Pillar Pantry

To win at the weeknight game, keep these three categories stocked:

  • The Power Proteins: Frozen shrimp (thaws in minutes!), canned beans and chickpeas, and rotisserie chicken or leftover roasted chicken. We often roast two chickens at once, saving the second chicken for another dish or dishes later in the week. So much versatility for minimal effort.
  • The Flash Veggies: Bagged coleslaw mix (you can also sauté it!), frozen peas or corn, and pre-washed baby spinach. Also utilize pre-cut veggies which are more costly but save time.
  • The Flavor Elevators: Pesto jars, low-sodium soy sauce, toasted sesame oil, and fresh lemons
  • Pasta in different shapes provide an array of meal choices
  • Basmati, Jasmine, and/or brown rice

The following dish is a crowd-pleaser that hits all the nutritional notes without the heavy price tag.

15-Minute Rainbow Shrimp Tacos

What You’ll Need: 

  • 1 lb frozen medium shrimp (peeled/deveined)
  • 1 bag of lime-cilantro slaw mix (or plain shredded cabbage)
  • Small corn or flour tortillas
  • 1 avocado, chopped into 1/2-inch squares
  • The Secret Sauce: A dollop of Greek yogurt mixed with a squeeze of lime and a dash of hot sauce.

The 15-Minute Method:

  1. Sizzle: Pat the shrimp dry and toss them in a pan with a little olive oil and taco seasoning. They only need 2–3 minutes per side.
  2. Char: Quickly warm your tortillas directly over a low gas flame (or in a dry pan) for 30 seconds to get that authentic “street taco” flavor.
  3. Stack: Pile the shrimp high, top with a generous handful of crunchy slaw, and drizzle with your zesty yogurt sauce.

More Rapid-Fire Ideas

  • The “Clean-Out-The-Crisper” Grain Bowl: Use pre-cooked quinoa or brown rice. Top with whatever roasted veggies are left in the fridge, a fried egg, and a drizzle of tahini, toasted sesame oil, and/or soy sauce.
  • Pesto Pasta with a Green Boost: While the pasta boils, toss a handful of frozen peas into the water for the last two minutes. Drain, toss with jarred pesto and fresh spinach, and a grate of parmesan. Dinner is served.

Once you’ve got your pantry stocked with a few of these staples you’ll be surprised at how many tasty, family friendly meals you can create.
